Story
Soito Wines, created in 2013, is one of Dão’s youngest and most promising projects. At Quinta do Soito, with an already long wine tradition, two teachers gave wings to the dream of transforming the family farm into a reference producer, with wines of exceptional quality.
The Dão region is located in Beira Alta, in the north of Portugal. The geographical conditions there are excellent for wine production: the Serras do Caramulo, Montemuro, Buçaco and Estrela protect the vineyards from the influence of winds.
Vineyard
The vineyards are planted in the sub region of Terras de Azurara, a place with Mediterranean climate and granitic soils. The vineyard was generous and provided a density of 3500 to 4000 feet per hectare, giving 5 tons of grapes per hectare.
Vinification
Classic vinification in stainless steel vats with skin maceration. Fermentation with controlled temperature to 28ºC and maceration for 6 days. Wine aged in French Oak barrels for 8 months.
Tasting Notes
It reveals notes of red fruit with notes of raspberry, light blueberry complexed with cinnamon and cloves, flanked by expressions of fresh vanilla. The mouth has a very elegant and balanced body, with velvety and round tannins, good expression of balsamic notes and caruma. It defines a sensory cut with a long, fresh and mineral finish.
Food Pairing
Accompanied by dishes of balanced and elegant structure or simply in good conviviality. Bottle age for up to 7 years.
