Lavau is a family owned company specialised in the vinification of fine wines of the Rhône Valley. The family has been making wines for more than 5 generations. Since 2010, they own several vineyards, in Valréas, Bagnols sur Cèze and Rasteau, as
well as a Château in Châteauneuf du Pape: Château Maucoil.
The vineyard has minimum treatment possible to optimise the yield with grapes at perfect maturity. A selection of the best fruit is done to ensure the highest quality wine. Tavel terroir is excellent for Grenache, Cinsault and Syrah. Grapes are picked in the early morning to deliver the best quality.
The Cinsault is vinified by direct pressing, grenache juice is bled of the skins (saignée), Syrah recieves a cool and short skinned contact before the pressing. The must is cooling at 53.6F, natural and light clarification of the must by racking. Fermentation is stainless-steel tanks. Controled temperature of maceration at 64.4F.
Classic tavel rosé color of deep pink with blood orange highlights. This wine is concentrated with a lot of aromas of red-currants, fresh nuts, rose and minerality. It reveals a fresh and well-balanced body with a good acidity.
This wine is perfect with tomato or creambased pasta, salad, barbecued dishes and salmon. Also enjoyed just on its own.
