Story
Lavau is a family owned company specialised in the vinification of fine wines of the Rhône Valley. The family has been making wines for more than 5 generations. Since 2010, they own several vineyards, in Valréas, Bagnols sur Cèze and Rasteau, as well as a Château in Châteauneuf du Pape: Château Maucoil.
Vineyard
The vineyard has minimum treatment possible to optimise the yield with grapes at perfect maturity. Grapes are picked in the early morning to deliver the best quality.
Vinification
The fruit is 100% destemmed upon arrival to the winery. The grapes then go through a 25 day cold maceration in large barrels. The cap management is maintained by twice a day punch downs. As the fruit nears the end of fermentation, the cellar crews also adds 1 pump over a day until the winemaker decides to pull the wine off the skins.
Tasting Notes
The wine opens with a nose of dry black fruit and hints of dark spice intertwined with smoke. The palat is robust, with flavors of black fruit and a mouthwatering leathery feel. This red blend of Grenache and Syrah is a perfect expression of the Rasteau terroir.
Food Pairing
This wine is perfect with a rabbit meat stew cooked with "Herbes de Provence".
