Story
Lavau is a family owned company specialised in the vinification of fine wines of the Rhône Valley. The family has been making wines for more than 5 generations. Since 2010, they own several vineyards, in Valréas, Bagnols sur Cèze and Rasteau, as well as a Château in Châteauneuf du Pape: Château Maucoil.
Vineyard
The vineyard has minimum treatment possible to optimise the yield with grapes at perfect maturity. A selection of the best fruits is done to ensure the highest quality wine. Tavel terroir is excellent for Grenache, Cinsault and Syrah. Grapes are picked in the early morning to deliver the best quality.
Vinification
Once the fruit arrives to the winery, it is macerated for 26 days in barrel and sees minimal interventions until the final rack of the wine off skins.
Tasting Notes
The wine is light in color with a soft texture. The palate comes forth with ripe cherry fruit and red plum, finishing off with a long silky mix of kirsch and dark berries.
Food Pairing
This wine is perfect with a rack of lamb of duck confit.
