Story
David Girard started the Domaine in 2003 when he was only 20 years old, along with his brother, Luc, who joined him in 2011. The domain is located in Humbligny, midway between Sancerre and Menetou-Salon. They are developing viticulturally and modernizing technologically. He is famous for his elegant wines from Menetou- Salon, made of Sauvignon Blanc, as well as a smaller production on Pinot Noir.
Vineyard
Located directly southwest of Sancerre, this relatively small appellation produces a similar range of high-quality white, red and rosé wines that offer excellent value. The vineyards are around 7 years old with a southern exposure. They are planted in clay and sedimentary limestone soil. They are dating back to the jurrasic periods (Kimmeridgian). Traditional to reasoning protection and work of the soil.
Vinification
Performed traditionally with great care from the winemaker. Fermentation takes place in temperature controlled stainless steel tanks. A Kieselgure filter is used for the final filtration in order to preserve the authenticity of the wine.
Tasting Notes
This wine has a pale straw yellow apperance, it has a vibrant and aromatic nose, with citrus fruit and mineral notes. Medium-bodied and round palate, with hints of menthol coupled with an elegant acidity.
Food Pairing
An excellent addition to Potato and Goat Cheese Tart or Shellfish and Vegetables.
