Domaine du Somail is located in the eastern part of the Minervois appellation, where vines have been tended to since the Roman period. The vineyard is cultivated biodynamically with respect to the terroir. All wines have been awarded the “Demeter” and “Agriculture Biologique” Organic certifications since the 2016 vintage.
The vines are planted on stony, limestone slopes of the “Montagne Noir,” or Black Mountain, dating back to the Eocene era. The grapes are hand harvested.
After fermentation in temperature controlled stainless steel tanks, the wines age for about 8 months. The wines are naturallt clarified and bottled at the estate with minimal use of sulfites.
A deep ruby color in the glass. The nose opens with aromas of ripe strawberries and red cherries, with floral notes of iris and hints of bay leaf. The mouth is compost of soft tannins, a supple structured body and a long finish.
Enjoy with game meats such as lamb or wild boar. Best served at 16 degrees Celsius and will keep for 6 years in bottle.
