Story
The wines of Rive Sud are vinified by Philipe Fabre in the Languedoc-Roussillon. Cave Anne de Joyeuse was founded in 1929 to vinify wines from Limoux and the Upper Aude valley, a region winegrowers have have found to have an exeptional terroir.
Vineyard
Lots of Sauvignon Blanc are cultivated seperately in a strict environmentally friendly manner, with minimal use of chemical sprays and complete vineyard traceability. The vines are located in the 3 sub-regions of Limoux: Mediterranean, Oceanic and Pyrenean. The soils are primarily clay-limestone with some rock and gravel components.
Vinification
The fruit goes through direct press immediately after being harvested. The fermentation occurs in a temperature controlled facility, followed by a chilled settling. This method encourages a natural way to clarify the wine without filtering it harshly, thus offering a more authentic product.
