The wines of Rive Sud are vinified by Philipe Fabre in the Languedoc-Roussillon. Cave Anne de Joyeuse was founded in 1929 to vinify wines from Limoux and the Upper Aude valley, a region winegrowers have have found to have an exeptional terroir.
The vineyard is located at the foothills of the Pyrenees Mountains, at one of the highest plantings in the area. In Limoux, more precisely in the Upper Valley, Pinot Noir finds ideal conditions for maximum expression: cool air and red clay soils rich in iron from the Cretaceous period on a base of crushed limestone. The important diurnal temperature fluctuations are perfect for the production of polyphenols and antioxidants.
The grapes are hand-picked, followed by maceration and fermentation under temperature-controlled conditions. Maceration occurs in stainless steel tanks.
Notes of Raspberries, Cherries, with a Fresh Finish.
Best paired with Tapas, Salmon, Tuna Steak or poultry dishes.
