This estate has been a “Propriétaire-Récoltant-Manipulant” of 5.5 ha in the commune of Vertus, Champagne, for many generations. All of their plots of vines are ranked as “Premier Cru”. Today, Thierry Brisson and Agnes Bourgeois run the estate.
The vines are of 50 years old, producing small but high quality yields. The assemblage for this wine is sourced from a 2015 harvest as well as reserve wine.
The fruit is all processed at the estate, with fruit grown on the estate, otherwise known as “Champagne de Vigneron. The fruit is pressed, settled and then goes through “debourbage” or “de-sludging” allowing solids to settle to the bottom. After primary fermentation, the wine is racked to seperate wine and lies. The wines go through secondary fermentation in bottle, one year later.
This champagne has a beautiful yelow robe with golden hues. The nose is delicate with aromas of hazelnuts, jammy fruits such as pear and apple. The mouth is dense, fresh with a long and elegant finish.
An excellent aperitif, or paired with crab de Saint-Jacques.
