Story
A family business for many generations, the Domaine Nudant spreads over 16 hectares, divided over the Côte de Beaune and the Côte de Nuits in Burgundy. It exploits around 20 appellations such as regional, village, 1er Cru and Grand Cru. The cellars, winery and reception are in Ladoix-Serrigny. In 1453, during the Charles le Téméraire period, a man named Guillaume Nudant was already making wine!
Vineyard
The “Santenots” vineyards are located in the village of Meursault. These vines were given to local peasants (to manage as part of their “duty”) by the Lord of Ladoix. The parcel has been passed down from generation to generation and it is now the oldest vineyard that the family owns. The Domaine uses a very strict and vigorous practice for selecting their vines: controlled yields, frequent ploughing and the use of chemical-free fertilizer. Convinced that there is a need for equilibrium between our work, nature and our terroir, the Domaine only treats the vineyards when necessary.
Vinification
Grapes are hand picked, and a meticulous berry selection takes places at the vineyard. At times, clusters can end up with only 2-3 berries, ensuring only the highest quality fruit is used. The juice then goes through cold maceration, with daily pigeage (Cap management). The fruit is pressed to barrel for fermentation, and aged between 12 and 15 months. Every year, one third of the barrels are renewed.
Tasting Notes
Appreciated for being a delicate wine, Volnay is often portrayed as one of Burgundy’s more feminine wine. The different structure of the soil make the “Santenots” a very aromatic and elegant wine, delicately complex and concentrated all at the same time.
Food Pairing
This wine pairs well with game or prime rib.
