Story
Domaine Larochette has been passed from father to son for generations. They are located in southern Burgundy on the slopes of Chaintré. Fabrice took over the vineyard in 1988 and began bottling under his name in 1995. The terroir is maintained with repect to local tradition and methods, all while utilizing modern technical developments of our day. Pouilly-Fuissé is the only Burgundy appellation outside of the Cote d’Or to be represented in the Hospices de Beaune yearly auction. 40% of this cuvee comes from the terroir (the “Climat”) of ‘Les Robées’.
Vineyard
The vineyard is planted on the mother stone of limestone, composed of 30cm of arable soil with large amounts of gracel at the surface. The vines are fully exposed to the south on a slope, and Les Robées is known to be the first plot to be harvested each season.
Vinification
The fruit is hand picked and meticulously destemmed. Winemaking occurs with the use of pneumatic press, and both alcoholic and malolactic fermentation in temperature control stainless steel vats. Ageing continues sur lies in stainless steel.
Tasting Notes
This wine presents itself with a pale golden color and a complex nose of citrus and pit fruits. The palate is rich and delicated with flavors of yellow peach, with an elegant finish and a touch of minerality.
Food Pairing
Serve this wine with crab, scallops and asparagus or fish terrine.
