Story
Roel of Ligtmans & Marlon Steine, a Dutch couple, bought the domaine in 2007. They were able to buy their first vineyard in 2008 and began the winemaking enterprise with the beautiful 2009 vintage. Their aim is to produce wine as naturally as possible: limited use of vineyard treatments and products, enhancement of biodiversity in the vineyard, revitalisation of the soil, and hands-off winemaking. Bottles, packaging, labels, are all chosen with regards to the environment. In 2010 the roof of the winery has been transformed into a solar energy production unit.
Vineyard
Every vineyard from this Domain is maintained in an eco-conscious manner, using certified organic practices since 2009. This means no chemical treatments to the vine nor the soil. This wine comes from the single vineyard “Le Saut Muchiau”, 1.3 acres located in Chamirey. The plot is on a clay and limestone soil and enjoys an Eastern sunshine exposition. The average age of the vines is 45 years and the yield varies between 30 and 40hl/ha.
Vinification
The fruit is manually harvested, and sorted at the winery. No sulfite additions were made. Depending on the year and the cuvée, 95% of the grapes are subsequently destemmed. Grapes undergo a cold soak for 4 to 5 days before fermentation starts. Fermentation takes about 3 weeks. This wines age in oak barrels for ten months, with 30 to 45% new oak.
Tasting Notes
This wine has a red robe and purple tints with aromas of ripe fruits like dark cherries, soft vanilla oak and hint of herbs. Classy and powerful this Mercurey can be kept for 3 to 4 years. Can be decanted.
