Story
At the foot of its high cliff, Saint-Romain is the finest example of the Hautes-Côtes-de-Beaune, where the landscape widens out to offer vast views. This enclosure brings to perfection the two Burgundy grape varieties, Chardonnay and Pinot Noir. This particular Chardonnay is composed of several plots: Sous Roche”, “Sous le Château”, “Le Jarron”, “La Perrière” and “En Chevrot”.
Vineyard
This vineyard is located in Hautes-Côtes-de-Beaune of Burgundy. The vines are on average between 35-50 years old, certified organic, and yield 42 hl/ha. The plot is south-east facing, planted on marl and limestone soils. The vines are ploughed.
Vinification
The grapes are hand-picked, and whole bunches are pressed directly in a pneumatic press. The wine is clarified in stainless steel vats, prior to being moved into oak (20% new) via gravity flow. Both alcoholic and malolactic fermentation occur without yeast addition, and the final wine is aged in barrels for 14 months.
Tasting Notes
Crystal clear yellow with green tinges, aromas of citrus and flint. The mouth is fresh and lively, with hints of minerality.
Food Pairing
This wine is best paired with white fish, or grilled vegetables. Enjoyably drank young.
