Story
Chassagne-Montrachet stretches towards the south of Puligny-Montrachet, along the hillside upon which grow the world ’s most reknowned Grand Cru white wines. This wide, astounding hillside brings to perfection the two Burgundy grape varieties, Chardonnay and Pinot Noir.
Vineyard
This Chassagne-Montrachet is a blend of grapes from three plots: “En l’Omeau”, from our Domaine, to the south of the village, “Les Blanchots”, situated just below the Criots-Bâtard-Montrachet and “Les Voillenots”, just below the village. The vines are on average 40 years old, certified organic and on an East/ South-East facing slope. The soils are composed of brown limestone and marl.
Vinification
The grapes are hand-picked, and whole bunches are pressed directly in a pneumatic press. The wine is clarified in stainless steel vats, prior to being moved into oak (28% new) via gravity flow. Both alcoholic and malolactic fermentation occur without yeast addition, and the final wine is aged in barrels for 14 months.
Tasting Notes
Golden yellow hue with green tints, scents of white flowers and citrus, underscored by hints of oak.
Food Pairing
This wine is best paired grilled fish or tomato based poultry dishes.
