Story
For many years associated with the aperitif named Kir, Bourgogne Aligoté now asserts the qualities of its flavours and shines alone! Made with Aligoté, worthily representing 6% of all grape varieties planted in the Burgundy area, it highlights this type of grape that is making its comeback thanks to winegrowers’ efforts to restrict its yields.Vines are generally planted in piedmont slopes, but the characteristics and sensations of this wine depend greatly on provenance.
Vineyard
This Aligoté is sourced from vines planted in Auxey-Duresses, between 25-40 years old. The fruit is Certified Organic, yielding 40 hl/ha, on a south-east facing plot composed of clay-limestone soil.
Vinification
The grapes are hand-picked, and whole bunches are pressed directly in a pneumatic press. The wine is clarified in stainless steel vats, prior to being moved into neutral oak via gravity flow. Both alcoholic and malolactic fermentation occur without yeast addition, and the final wine is aged in barrels for 12 months.
Tasting Notes
Pale golden hue with aromas of lemon, acacia and delicate butter. Pure, refreshing and vibrant on the palate.
Food Pairing
This wine is best drank young, and is an ideal aperitif. It can also be served with more elaborate summer dishes.
