Story
Castel Estates and Vineyards are run by three generations working hand in hand. The first - Pierre Castel’s generation - ensure that the company’s founding values are never compromised. The second, featuring Alain and Philippe Castel, specify the strategic focus for the properties at all levels. And the third generation continue the adventure: Sophie Castel and Verena Raoux manage external relations while Alexis Raoux is responsible for Sustainable Development policies.
Vineyard
The grapes are sourced from limestone and Montmorillonite clay soils. The plot is located on a north facing hillside, of only 3.86 hectares. The vines see some canopy management, including leaf thinging. Terra Vitis accredited since 2012
Vinification
The inspiration behind Haut-Coulon wines comes from Bourgogne, using techniques such as punching down to achieve ever greater purity of flavour. After the fruit is brought in, the grapes begin to ferment with alternating punch downs and pump overs in truncated conical vats. 500L Barrels were also used to ferment a portion of the berries off the juice. The wine is then aged 12 months in oak barrels, 20% of which new.
Tasting Notes
Deep notes of spice, cacao and vanilla on the nose. The palate presents excellent freshness with hints of red fruit, rounded out by slight salinity and finishing with medium, elegant length.
Food Pairing
Roast chicken, juicy cuts of red meat such as bone-in shoulder of lamb, or mature cheeses.
