Directly outside the town of Dijon, the Fixin vineyard, just north of Gevrey-Chambertin, opens the gateway to the Côte de Nuits. Red wines of character are produced here and more rarely, white wines that show strong personality too. This specific plot has been harvested by the Domaine since 1999.
This vineyard is located in the village, underneath the 1er Cru Clos Napoleon. The vines are on average 50 years old, certified organic, and yield 36 hl/ha. The plot is south-east facing, planted on brown limestone soils.
The grapes are hand-picked, and whole bunches are pressed directly in a pneumatic press. The wine is clarified in stainless steel vats, prior to being moved into oak (18% new) via gravity flow. Both alcoholic and malolactic fermentation occur without yeast addition, and the final wine is aged in barrels for 14 months.
Crystal clear yellow with gold tints. Fresh nose of tropical fruit and flowers. A lengthy palate with flavors of yellow fruit and sharp citrus, with a velvety finish.
This wine is best paired with white fish, or grilled vegetables.
